Ahhhhhh, Puff Wheat Squares. These bad boys take me right back to the good ol' days of childhood of no responsibilities and so much fun.
A recent craving for these chocolatey goodies inspired me to create a healthier version of this classic without the high fructose corn syrup and with a couple extra additions for added nutrition and digestive power.
And I must say, they were just as satisfying.

Ingredients
3 cups medjool dates, pitted
1/3 cup coconut oil
1/2 cup dark unsweetened chocolate chunks
6 cups puffed kamut or puffed wheat
1/2 cup hemp hearts
1/4 cup chia seeds
1 tsp chai spice mix
1/2 tsp sea salt
Optional toppings
Dark Chocolate drizzle
Coconut flakes
Mac nuts
Cacao Nibs
Directions
1) Over medium low heat, ideally over a double boiler, melt coconut oil, spice mix & dark chocolate. Remove from heat, add sea salt.
2) Add pitted dates & melted chocolate mixture to food processor or good quality blender. Blend until smooth-ish.
3) Add mixture to large mixing bowl & add puffed kamut, hemp hearts & chia seeds. Mix until well blended. Mixture will be thick, so you may need to use some muscle power. You can also use your hands to knead mixture together.
4) Press mixture into pan of choice and refrigerate OR add toppings of choice covered with melted coconut oil + dark chocolate drizzle.
